Harvest 2025

As we near the end of the 2025 harvest, we're reflecting on what has been an exceptional season here in New Hall.


The growing season kicked off very well indeed, with warm and consistent weather with low disease pressure. That stability allowed our grapes to ripen evenly and cleanly, setting the stage for high quality across the board.


Summer remained dry, which led to more moderate yields—but in return, we saw remarkable quality. In fact, 2025 delivered some of the highest grape sugar levels we've ever recorded, pointing to wines with depth, structure, and intensity.


One of the true standouts this year has been our Précoce varietals. These early-ripening grapes have been a flagship for our red and rosé wines. Their rich colour, bright acidity, and pure fruit character are already showing beautifully in early ferments.

Our machine harvester continues to be a key player—allowing us to pick fruit at just the right moment, matching winery needs with vineyard timing. That level of precision is critical for preserving freshness and balance in the wines.


As we look ahead to this final stretch of harvest, we’re preparing for two important milestones. First, our noble sparkling varietals are scheduled to be hand-picked this week. These grapes will be whole-bunch pressed; a gentle technique essential for crafting elegant, traditional-method sparkling wines.


Then comes the grand finale: the harvest of our ultra-ripe red parcels, destined for barrel aging. These blocks have been hanging just a bit longer to develop maximum richness and complexity, and we can’t wait to see what they bring to the cellar.
